Kirsten West is an international chef and cooking instructor (Piña Azul Cooking School) who has studied regional Mexican cuisine for over 30 years. Her teachers have ranged from many Mexican cooks to Diana Kennedy and Rick Bayless, both recipients of the Orden Mexicana del Águila Azteca (Mexican Order of the Aztec Eagle), the highest recognition given to foreigners for promoting Mexican culture. She collaborated over 8 years with Rick Bayless and tested all recipes for three of his cookbooks.
